COCONUT CHIA SEED PUDDING



Last night my sweet daughter, Juno, soon to be 17, made us this for breakfast. She's eating raw food with me at the moment for the first time, and it's been a week, now. Rather than missing her usual staples, she's getting super creative, tasting and making entirely new things. That's what it's like for me too- no deprivation - only exploration - and what wonderful things we find :) Chia seeds absorb the liquid they're soaked in and take on a delicious puddingy texture. Left overnight in coconut milk and honey and eaten in the morning with granadillas from my neighbour's gardens they become something quite divine.

INGREDIENTS: 1/4 cup chia seeds

1 cup coconut milk

1tsp raw honey

DIRECTIONS:

Combine chia seeds, coconut milk, and honey in a small bowl or cup. Leave to stand overnight, or for at least 2 hours, refrigerated if necessary. Add fresh fruit and enjoy!
